The build in detail
The official MexiMelt, discontinued in 2019, was a study in subtraction: seasoned beef, three-cheese blend and pico de gallo in a soft tortilla, steamed — no lettuce, no sour cream, no crunchy shell, nothing else in the way. This build recreates it from a Soft Taco by taking the lettuce out, adding extra cheese and pico, and insisting on the steam, which is what melts the cheese into the beef instead of leaving it in shreds on a cold tortilla.
